Dr. Enes Dertli have expertise on different molecular techniques including molecular cloning, tissue culture, microbiota analysis, PCR, RT-PCR, Flow Cytometry to investigate the functionality of different LAB strains and their metabolites on probiotic action and other properties. Currently, Enes Dertli working on glucansucrases of LAB which are responsible for the production of different glucan EPSs and They have a model Lactobacillus reuteri strain that harbour a novel glucansucrase and this strain has the ability to produce a glucan EPS. They will delete this gene in order show its effects on sourdough environment. They will also express the glucansucrase and determine the effectiveness of the glucansucrase for the production of different oligosaccharides which will further be tested for their potential as prebiotics.
Dr. Enes Dertli research interests are determination of the role of Lactic Acid Bacteria (LAB) on the production of different fermented food products and the potential of novel LAB strains as probiotics and understanding the role of metabolites of LAB on probiotic action as well as for the production of different food products. These metabolites include mainly exopolysaccharides (EPS) and antimicrobials such as bacteriocins and production of aroma compounds and functional compounds such as GABA are among Enes interests as LAB metabolites. All fermented food products that include sourdough, yogurt, cheeses, Kefir and other products are on Enes target as potential novel LAB sources and following the identification of novel LAB strains, they test them for their techno-functional roles. Starter cultures and non-starter cultures are also Enes research interests and Enterococci is one of our targets as non-starter LAB in fermented dairy products.
