Dr. Tomás Herraiz (PhD) is a Research Scientist with the Spanish National Research Council (CSIC) -Institute of Food Science, Technology and Nutrition (ICTAN-CSIC), Madrid-. He received his BS and PhD degrees in Chemistry (Biochemistry) from the Complutense University of Madrid. He was a postdoctoral NATO fellow at the University of California, Davis, USA and a Visiting Scientist at the same university. He has conducted research on the characterization and analysis (chromatography and mass spectrometry) of bioactive and toxic compounds in foods and natural products with particular attention to indole compounds and alkaloids (carbolines). His research has focused on the metabolic biotransformation (oxidoreductases) of bioactive and toxic compounds and their biological activity as enzyme inhibitors and antioxidants. He has reached scientific accomplishments and has authored over ninety original research articles in prestigious journals, and book chapters. He has served as a reviewer of research articles for more than thirty journals from various scientific areas.
