Dr. Daniel Méndez Iturbide (PhD) is a principal Researcher at the Universidad Autónoma de Tlaxcala, Mexico and Professor in the Universidad Nacional Autónoma de México (UNAM) in Organic Chemistry. He completed his doctorate in Organic Synthesis in the Chemistry Institute of the UNAM. In the last 12 years, he has developed research about the evaluation of antioxidant capacity in differents native fruits from Mexico and the elucidation of metabolites with antioxidant activity. Has obtained financing from the Mexican Government to develop research about the inhibition of lipoperoxidation in human erythrocytes, also collaborates with important nutritionists to design nutraceutical foods. The most recent works are in the field of carbonylation of proteins with oxidative stress and their inhibition whit fruit extracts of rosaceae family with antioxidant capacity, this carbonylation of proteins are associated with chronic degenerative diseases. It has outstanding scientific and academic achievements with research funds, also many publications in international journals and differents presentations in national and international conferences.
